Marinated Venison tenderloin Foil Pack

09/01/2010

My good friend Illicitdreams  over at BCUSA gave me permission to re-post his recipe for Marinated Venison tenderloin Foil Pack!

Marinated Venison Tenderloin Foil Pack

2 Nice sized Venison Tenderloins
2 Cups Chili Lime Marinade
2 Carrots (or one a handful of baby carrots.)
1 Large Potato
2 Tablespoons Butter
Zatarans Cajun Seasoning

Place the Tenderloins in the marinade for a minimum of 4 hours( Overnight works best for me)… Best to do this when you wake up that way they will be good and marinated by dinner time.

Rinse carrot, and potato, and slice however you prefer, I leave the skin on the potato.

Once you get the potato and carrots sliced, add the 2 tablespoons of butter to the center of a large piece of aluminum foil. Place the potato and carrot pieces over the butter, and add the Cajun seasoning. Once the seasoning is added, place the tenderloins on top of the pile. Wrap the foil tightly around the tenderloins and vegetables.

Place the foil pack on the coal bed of your fire, leave in place for 15-20 minutes, then flip the foil pack over, and cook for an additional 10-15 minutes. Remove foil pack from the coals, and enjoy!
